Is she married? Must be w/ that obviously non-Hispanic last name

Paola is (and always has been) one of the lead meteorologists for Univision 23, which is the local Miami Univision channel. That's her primary job.

Univision 23, of course, shares offices with Univision's broadcast HQ. Paola has occasionally ended up on the national Univision shows doing fill-in weather duty simply because she's already in the building doing the local weather (and she's attractive).

Basically, until Paola leaves Univision 23, she'll never be "gone" from shows like Despierta America, Primer Impacto, or where ever else she may be needed. The Univision execs would just rather have a selected person maintain the weather gig for a particular national show.

Just a guess, but it could just as easily be a family name - she may not be 100% Hispanic.
